Breakfast Scramble

Here is the recipe for the breakfast scramble that was served at the waffle party.

Ingredients:
1 clove of garlic
2 tbsp diced red bell pepper
2 tbsp diced brocolli
1/2 potato
1 packet Fantastic World Foods Tofu Scramble Mix
14oz package firm or extra firm tofu

1. Drain and squeeze excess water from tofu.
2. Mash 1 tofu scrambler seasoning packet into tofu until throughly blended
3. Spray skillet w/ cooking spray and saute garlic.
4. Add potatoes to skillet. Cover and cook over medium heat until soft.
5. Add brocolli and red peppers to skillet and cook 5-10 minutes or until desired tenderness
6. add tofu mixture to skillet and combine with potato mixture. Press mixture evenly into pan. Cook 5 minutes, turn and cook an additional 5 minutes.
7. Serve w/ toast or warm tortillas

Sinful Cheesecakey Vegan Waffles

Get your tastes buds warmed up with this vegan waffle treat! Stop by 3 Rivers Food Co-op at 1612 Sherman Boulevard to pick up all the ingredients for these Sinful Cheesecakey Vegan Waffles. And, be sure to thank them for supporting the Waffle Party!

Singredients:

    1 C + 2 T white all purpose flour (Variation: Replace 1/4 C of this with whole wheat flour, or replace the whole C with Bob’s Red Mills gluten-free all purpose flour-I got decent results with both. In fact, the waffles in the 2nd picture were made with the GF flour.)
    1 1/4 t baking powder
    1/2 t baking soda
    1 1/4 t cinnamon
    3/4 t salt
    1 – 8 oz. container non-hydrogenated plain vegan cream “cheese”
    1/2 C + 2 T unsweetened plain soymilk
    3 T canola oil
    2 T lemon juice
    1/2 C raw sugar
    2 t vanilla

Directions:
In a large bowl, sift or whisk together the flour, baking powder, baking soda, cinnamon and salt.

In a medium bowl, microwave the vegan cream cheese just until softened (this probably won’t take more than 30 to 45 seconds). With the cream cheese, whisk together the soymilk, oil, lemon juice, sugar, and vanilla until smooth. Pour this mixture into the big bowl with the flour mixture, and mix everything just until blended.

Cook for a minute or two longer than you usually cook your waffles on a generously oiled waffle iron. This recipe makes roughly 3 1/2 round Belgian-style vegan waffles on our Waring WMK-300. Enjoy!

Loving Cafe has teamed up with their neighbor, Cutter’s Gallery Hair Salon. Cutter’s Gallery will be saving all hair clippings to donate to Matter of Trust. Matter of Trust. Matter Of Trust is providing a safe, non-toxic, effective way to participate in the Gulf Spill clean up. Donors from every state in the US, from Canada and beyond are sending in hair, fur and wool clippings as well as nylons and funding for outer mesh. The fibers are stuffed into the recycled nylons and covered in mesh to make booms or, when possible, woven into hair mats that can protect beaches and coastal waters.

“Why use oil based products or other chemicals to clean up an oil spill, when every day hundreds of thousands of pounds of natural, renewable fiber are thrown away,” says Sheila Stuckey, owner of Cutter’s Gallery.

Shiela encourages other area salons to start saving hair clippings as well and to drop them off at Cutter’s Gallery which will then be forwarded on to Matter of Trust.

Help animals affected by the oil spill

In response to what may become the nation’s worst environmental disaster in decades, George Lee, owner of Loving Café at 7605 Coldwater Road, has made his restaurant a donation drop off site to collect supplies needed to help the animals affected by the oil spill.

“When I first heard about the oil spill my heart ached for the animals, “ says George Lee, “ the spill will be truly devastating to animals and their habitats in the gulf coast.”

Loving Café will be collecting items through the end of the month to be donated to PATH (People Protecting Animals & Their Habitats).

Supplies needed include:

• Nets with Handle Netting
• Tents with stakes
• WaterPic(K)s – water spray – not electric brush
• Sun Protection Lotion (non animal tested please)
• Wading Boots Syringes for feeding (NO NEEDLES)
• Digital camera (s) with appropriate connecting cords
• Video camera w/ appropriate connecting cords
• Vet Wrap
• Veg/Vegan snack bars
• Walmart/Target gift cards
• Heating pads
• Electrical extension cords
• Pliers
• Financial support – donations
